steamy 4th of july

hottest hot 4th of july! super fun family reunion in lyme, nh. thankful for a cool stream, a great family and a shady porch to sit on!

here is the recipe for my grandmother's "no bake cookies". i always make them for the family reunion(and lots of other times because i LOVE them!)

MIMI'S NO-BAKE COOKIES

2 c. sugar
1/4 c. cocoa
1/2 c. milk
1/4 c. (1/2 stick) butter

put together in a medium saucepan, and bring to a full boil over medium heat. (NOTE: boil just long enough so that there are bubbles over the entire surface of the mixture and then turn it right off . you boil it only a very short time!)

remove from heat and add:

1 t. vanilla
2/3 c. peanut butter
3 c. quick oats

mix all together and drop from a teaspoon onto cookie sheets. i line mine with wax paper to make it easy to get the cookies off. put into the refrigerator until they set up, then try not to eat all of them!!!

keep cool!!!!!

i knit these socks many moons ago, before i knew a thing or two about a thing or two, sock knitting-wise...they are a bit tough to get on, but once you do, they're there for good!

mmmmm, chocolate

last night for a special dessert, i made chocolate quiche. if you like chocolate, this is about the most delicious thing you will ever eat (in my opinion, of course!) it's also super easy to make, especially if you have a pre-made crust! here is the recipe:

CHOCOLATE QUICHE

make 1 pie crust (bottom crust only)

melt 18 oz. chocolate chips, cool slightly.

beat 1 3/4 c. heavy cream with

7 egg yolks.

beat til just mixed. beat in chocolate. pour into crust.

bake at 350 degrees for 45 minutes!
